Brighton’s Best Dish: Malay Fried Chicken at Baby Bao
You’ll no doubt have tried the bao buns at Baby Bao at The Pond. The Classic Gua bao, filled with with braised free range pork belly, cucumber, peant and spring onion and the Confit Duck with hoisin, cucumber and spring onion were as light, fluffly and delicious as always when we visited last week. But perhaps even better was the Malay style fried chicken - super crispy, and served with a rich condensed milk-based sauce, balanced with plenty of chilli, garlic, lime and fragrant curry leaves. It was insanely great. We’d also highly recommend pairing it with the Baby Bao chips, the quintessential ‘loaded fries’ topped with an umami bomb combo of miso mayo, sriracha, hoisin, peanuts and spring onions.
