English asapragus season is only around for a short while, but when it is in season in the spring, The Flint House make the most of it. Grilling the vegetable, as they have done for this dish, is the perfect way to accentuate the green, grassy flavours while the char adds some smokey complexity. Whipped ricotta brings a note of creamy luxuriousness to conterpoint the perfect bite of the asapragus and the crunchy pangratto (fried breadcrumbs). The subtle heat from the chilli dressing is a touch of genius.
